Lemon Garlic Tilapia with Home Made Mashed Potato

Finally Monday is coming. I've planned to try a new recipe for dinner. This time is Lemon Garlic Tilapia with Home made Mashed Potato. Sounds fancy, right? It does! Even though this is my first trial, it turns out really good. My sisters really likes this. So, you may want to try this too :)

FYI...I really like tasty food. So, definitely I love garlic. So, if you do not like garlicky, just reduce the amount as you like.

Lemon Garlic Tilapia
(for 4 servings)

Ingredients:
4 Tilapia fillets
2 tbspoons lemon juice
3 tbspoons extra virgin oil/butter (melted)
3 cloves garlic, finely chopped
1 teaspoon dried parsley flakes
salt and pepper as needed
2-3 tbspoons bread crumbs (as needed)

Directions:
1. Spray a baking dish with non-stick cooking spray.
2. Rinse Tilapia under cool water, pat dry with paper towels, then put it into the baking dish
3. Lightly rub salt and pepper into the fish and put it aside for 1 hour
4. In a saucepan, put EVO and garlic. Saute it until it becomes gold and smells good. Then, add lemon and parsley. Finally, put aside so it cools down.
5. Pour the sauteed sauce on the top of Tilapia. Then, marinate it few hours (the more you marinate it, the better it tastes. I marinate it overnight).
6. Preheat oven to 375 degree F. Then, bake it for 10 minutes.
7. Open the oven, sprinkle bread crumbs on the top on the fish and bake it for another 5 mins.
8. Serve this with Mashed potato and some veggies.

Home Made Mashed Potato
(for 6 servings)

Ingredients:
8 medium potatoes (red or white)
8 cloves garlic, peeled
4 tbspoons butter
1/2 cup fat-free milk, warmed
1/2 teaspoon salt
1/2 teaspoon pepper
1/4 cup grated Parmesan Cheese
flaked herbs: Oregano, Parsley, thyme as needed

Directions:
1. Place potatoes and garlic in a large saucepan; cover with water. bring to a boil. Reduce the heat. Then cover and simmer for 20 minutes or until potatoes are tender.
2. Drain the potatoes; peel (depends on type of potatoes) and mash.
3. Blend the garlic after the boiling the potatoes.
4. In the small saucepan, saute butter and garlic.
5. Put milk, sauteed butter and garlic, salt + pepper and Parmesan cheese into the mashed potatoes then stir.
6. Add flaked herbs as much as you like.
